Start by gathering all the ingredients. Shred the mozzarella if it is not already shredded, and have the pepperoni slices ready.
For an extra flavorful quesadilla, mix the garlic powder and Italian seasoning together in a small bowl.
Step 2: Warm the Pan
Place a large nonstick skillet or frying pan over medium heat.
Add about half of the butter or olive oil and allow it to heat gently. Avoid using very high heat because the tortilla can become too dark before the cheese melts.
Step 3: Assemble the Quesadilla
Place one tortilla in the warm skillet.
Spread a thin layer of marinara or pizza sauce over one half of the tortilla, leaving a small border around the edges.
Sprinkle some mozzarella cheese over the sauce, followed by the mini pepperoni slices.
Add another layer of mozzarella and sprinkle lightly with the garlic powder and Italian seasoning. If you enjoy a little heat, add a small pinch of red pepper flakes.
Step 4: Fold the Tortilla
Carefully fold the empty half of the tortilla over the filling to create a half-moon shape.
Press gently with a spatula so the filling stays inside while the quesadilla cooks.
Step 5: Cook Until Golden
Cook the quesadilla for about 2–3 minutes on the first side, or until the bottom becomes golden and crispy.
Carefully flip it using a spatula.
Cook the other side
