1. Prepare the grapefruit
Cut the top and bottom from each grapefruit.
Stand each grapefruit upright and carefully cut away the peel and white pith with a sharp knife, following the curve of the fruit.
Then cut between the membranes to remove the grapefruit segments.
Place the segments in a bowl and set aside.
2. Prepare the avocado
Cut the avocado in half and remove the pit.
Scoop out the flesh and cut it into bite-sized pieces.
Drizzle with a little lemon juice to help prevent browning.
3. Prepare the onion and mint
Thinly slice the red onion.
Pick the mint leaves from the stems and gently tear any large leaves into smaller pieces.
4. Make the dressing
In a small bowl, whisk together the grapefruit juice, lemon juice, olive oil, honey, salt, and black pepper.
Continue whisking until the dressing is well combined.
5. Assemble the salad
Place the grapefruit segments, avocado, red onion, and mint into a serving bowl.
Pour the dressing over the top.
6. Toss gently
Gently toss everything together using a large spoon.
Be careful not to crush the grapefruit or avocado.
7. Add the toppings
Sprinkle the chopped walnuts or pistachios over the salad.
Add crumbled feta if desired.
8. Chill and serve
For the best flavor, refrigerate the salad for about 10–15 minutes before serving.
Serve chilled as a refreshing side dish, light breakfast, or snack.
