Classic Cucumber, Tomato and Onion Salad

  • by

A crisp, juicy and refreshing salad that takes just a few minutes to prepare. It’s perfect as a light side dish for lunch, dinner, barbecues, or summer gatherings.

🥗 Ingredients

  • 2 large cucumbers
  • 3 medium ripe tomatoes
  • 1 small sweet onion or red onion
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice or vinegar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried oregano
  • 1 tablespoon fresh parsley, chopped
  • Optional: a pinch of sugar for a slightly sweeter dressing

👩‍🍳 Step-by-Step Instructions

1. Prepare the vegetables
Wash the cucumbers and tomatoes thoroughly. Slice the cucumbers into thin rounds or half-moons.

2. Cut the tomatoes
Cut the tomatoes into bite-sized wedges or chunks. Add them to a large salad bowl.

3. Slice the onion
Thinly slice the onion. If you prefer a milder flavor, soak the slices in cold water for 5–10 minutes, then drain well.

4. Combine everything
Add the cucumbers and onions to the bowl with the tomatoes. Gently toss the vegetables together.

5. Make the dressing
In a small bowl, whisk together the olive oil, lemon juice or vinegar, salt, black pepper, and oregano.

6. Dress the salad
Pour the dressing over the vegetables and gently mix until everything is evenly coated.

7. Add fresh herbs
Sprinkle with chopped parsley and give the salad one final gentle toss.

8. Chill and serve
For the best flavor, refrigerate for 10–15 minutes before serving. Serve cold and enjoy!

❤️ Easy Tip

For extra flavor, you can add crumbled feta cheese, olives, fresh basil, or a little minced garlic.
