1. Prepare the beef mixture
Place the ground beef in a large bowl.
Add the diced onion, minced garlic, egg, breadcrumbs, mozzarella, parsley, paprika, Italian seasoning, garlic powder, salt, black pepper, and Worcestershire sauce.
Mix gently with your hands until everything is evenly combined. Avoid overmixing, which can make the rolls dense.
2. Shape the rolls
Divide the mixture into approximately 10–12 equal portions.
Shape each portion into a compact small log, about 4–5 inches long.
3. Wrap with bacon
Wrap each beef roll with one slice of bacon, slightly overlapping the edges as you go.
Place the rolls seam-side down so the bacon stays in place.
4. Chill briefly
Place the bacon-wrapped rolls in the refrigerator for about 15–20 minutes. This helps them hold their shape while cooking.
5. Brown the rolls
Heat a large skillet over medium heat and add the olive oil.
Place the rolls in the skillet and cook, turning every few minutes, until the bacon is browned on all sides.
6. Finish cooking
Transfer the browned rolls to a baking dish or sheet pan.
Bake in a preheated 375°F (190°C) oven for approximately 15–20 minutes, or until the ground beef reaches 160°F (71°C) internally.
7. Rest
Remove the rolls from the oven and let them rest for about 5 minutes before serving.
8. Serve
Arrange the golden bacon-wrapped beef rolls on a platter.
Serve them with mashed potatoes, roasted vegetables, salad, or your favorite dipping sauce.
Tip: For an extra-cheesy center, place a small stick of mozzarella or cheddar inside each beef portion before shaping it into a roll. 🥓🧀🥩
