- 500 g ground pork sausage
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ¼ teaspoon garlic powder
- ¼ teaspoon dried sage, optional
For the Biscuits
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup cold butter
- ¾ cup buttermilk
For Serving
- 2–3 ripe tomatoes, sliced
- Extra butter for the biscuits, optional
Step 1: Make the Biscuits
Preheat the oven to 220°C (425°F).
Combine the flour, baking powder, and salt in a large bowl.
Cut the cold butter into the flour mixture until it resembles coarse crumbs.
Pour in the buttermilk and gently mix until a soft dough forms.
Turn the dough onto a lightly floured surface and gently pat it to about 2 cm thick.
Cut into rounds and place on a baking sheet.
Bake for 12–15 minutes, or until golden brown.
Step 2: Cook the Sausage
Mix the sausage with the pepper, paprika, garlic powder, and sage if using.
Divide it into portions and shape into small patties.
Heat a skillet over medium heat and cook the patties for about 4–5 minutes per side, or until thoroughly cooked through.
Transfer to a plate lined with paper towels.
Step 3: Prepare the Eggs
Crack the eggs into a bowl and whisk together with the milk, salt, and pepper.
Melt the butter in a nonstick skillet over medium-low heat.
Pour in the eggs and gently stir with a spatula, pushing the eggs from the edges toward the center.
Continue cooking until the eggs are softly set but still moist.
Remove from the heat immediately so they don’t become dry.
Step 4: Prepare the Tomatoes
Wash the tomatoes and slice them into rounds.
Season lightly with salt and freshly ground black pepper if desired.
Step 5: Assemble the Plate
Place the scrambled eggs, sausage patties, warm biscuits, and sliced tomatoes on a plate.
Serve immediately while everything is warm.
Easy Variations
Add shredded cheddar cheese to the eggs, serve the biscuits with homemade gravy, or add fresh fruit for a more complete breakfast.
