I made this for dinner last night and WOW—the whole family was fighting over the last piece! The chicken came out beautifully golden and caramelized on the outside, incredibly juicy inside, and coated in a sweet, savory, garlicky glaze.
It’s one of those recipes that’s easy enough for a weeknight but delicious enough to serve when you’re having guests. After making it once, it’s definitely going into our weekly rotation!
Ingredients
For the Chicken
- 2½ pounds chicken thighs, preferably bone-in and skin-on
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- 1 tablespoon olive oil
For the Sticky Glaze
- ⅓ cup honey
- ¼ cup soy sauce
- 4 cloves garlic, finely minced
- 1 tablespoon ketchup
- 1 tablespoon brown sugar
- 1 tablespoon apple cider vinegar or lemon juice
- 1 teaspoon sesame oil, optional
- ½ teaspoon red pepper flakes, optional
For Garnishing
- Chopped fresh parsley or cilantro
- Sesame seeds
- Sliced green onions
Step 1: Prepare the Chicken
Pat the chicken thighs completely dry with paper towels.
Removing excess moisture helps the chicken brown properly and gives the outside a much better texture.
Place the chicken in a large bowl.
Add the salt, black pepper, paprika, garlic powder, and olive oil.
Toss everything together until every piece of chicken is evenly coated.
Step 2: Prepare the Glaze
In a separate bowl, combine the honey, soy sauce, minced garlic, ketchup, brown sugar, and apple cider vinegar.
Add sesame oil and red pepper flakes if you’re using them.
Whisk everything together until smooth.
The combination of honey and brown sugar gives the chicken its beautiful caramelized finish, while soy sauce and garlic provide the savory flavor.
Step 3: Let the Chicken Rest
For the best flavor, allow the seasoned chicken to rest for about 15–30 minutes before cooking.
If you’re preparing it ahead of time, you can cover it and refrigerate it for several hours.
Step 4: Sear the Chicken
Heat a large oven-safe skillet over medium-high heat.
Place the chicken thighs skin-side down.
Cook for approximately 5–7 minutes, without moving them too much, until the skin becomes deeply golden and crisp.
Turn the chicken over and cook for another 2–3 minutes.
You don’t need to cook the chicken completely at this stage—the oven will finish the job.
Step 5: Add the Glaze
Pour the prepared honey-garlic glaze over the chicken.
Turn each piece so that it becomes coated in the sauce.
Allow the glaze to bubble gently for about 1–2 minutes.
Be careful not to let the honey burn.
Step 6: Transfer to the Oven
Preheat the oven to 400°F (200°C).
Place the skillet in the oven and bake the chicken for approximately 20–25 minutes, depending on the size of the pieces.
Halfway through cooking, spoon some of the sauce from the pan over the chicken.
Step 7: Check for Doneness
The chicken should be completely cooked in the center.
For food safety, chicken should reach an internal temperature of 165°F (74°C) at the thickest part.
If you’re using bone-in thighs, avoid touching the thermometer to the bone when checking the temperature.
Step 8: Caramelize the Top
For that gorgeous sticky, glossy finish shown in the photograph, turn the oven to broil for the final 1–3 minutes.
Keep a close eye on the chicken because the honey in the glaze can caramelize very quickly.
Remove it as soon as the surface becomes deeply golden and glossy.
Step 9: Rest the Chicken
Remove the skillet from the oven and let the chicken rest for about 5 minutes.
This allows the juices to settle and gives the sauce a chance to thicken slightly.
Spoon some of the delicious pan sauce over the chicken before serving.
Step 10: Garnish and Serve
Sprinkle the chicken with chopped fresh parsley, sesame seeds, or sliced green onions.
Serve it hot with mashed potatoes, steamed rice, roasted vegetables, corn, or a simple green salad.
The caramelized sauce is especially delicious spooned over rice.
Tips for Extra-Juicy Chicken
Patting the chicken dry before seasoning is important because it helps create better browning.
Don’t overcrowd the skillet. If necessary, brown the chicken in batches.
Keep an eye on the glaze toward the end of cooking because honey and brown sugar can burn quickly.
For an especially sticky finish, brush a little additional glaze over the chicken during the final few minutes of baking.
If you prefer boneless chicken thighs, they work beautifully too, but cooking time will be shorter.
Easy Make-Ahead Option
You can season the chicken and prepare the glaze several hours in advance.
Keep both refrigerated until you’re ready to cook. When dinner time comes, simply sear the chicken, add the glaze, and finish it in the oven.
The result is tender, juicy chicken covered in a sticky, caramelized honey-garlic coating—the kind of dinner that disappears from the table before you even have a chance to save leftovers.
And if your family starts fighting over the last piece, don’t say I didn’t warn you!
