Crispy Cauliflower: Golden, Crunchy, and Irresistibly Easy

This crispy roasted cauliflower is golden on the outside, tender in the center, and packed with savory flavor. It makes a delicious side dish, snack, or light vegetarian meal.

Ingredients

  • 1 large head cauliflower
  • 3 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried oregano
  • ¼ teaspoon chili flakes, optional
  • 2 tablespoons grated Parmesan cheese, optional
  • 1 tablespoon fresh chopped parsley
  • Lemon wedges, for serving

Instructions

1. Prepare the cauliflower
Preheat your oven to 220°C (425°F). Wash the cauliflower and dry it very well. Cut it into thick slices or medium-sized florets, keeping some of the flat surfaces intact. The flat sides will become especially golden and crispy.

2. Make the seasoning
In a large bowl, combine the olive oil, paprika, garlic powder, onion powder, cumin, salt, black pepper, oregano, and chili flakes if using.

3. Coat the cauliflower
Add the cauliflower pieces to the bowl. Toss thoroughly until every piece is lightly coated with the seasoned oil.

4. Arrange on the baking sheet
Spread the cauliflower in a single layer on a baking sheet. Avoid overcrowding the pan, as too many pieces together will cause the cauliflower to steam instead of becoming crispy.

5. Roast
Place the tray in the preheated oven and roast for 20–25 minutes. Flip the cauliflower halfway through cooking so both sides become beautifully browned.

6. Make it extra golden
For an even crispier finish, sprinkle the Parmesan over the cauliflower during the final 5 minutes of roasting. Continue cooking until the edges are deeply golden and crunchy.

7. Finish and serve
Remove from the oven and let it cool for a couple of minutes. Sprinkle with fresh parsley and serve with lemon wedges.

Tips for Extra-Crispy Cauliflower

Make sure the cauliflower is completely dry before seasoning. Use a hot oven and leave space between the pieces. Cutting some pieces into thick slices also creates larger flat surfaces that caramelize beautifully.

For a spicy version, add extra chili flakes or a pinch of cayenne. For a cheesy version, finish with Parmesan and a little mozzarella during the last few minutes of baking.

Serve this crispy cauliflower as a side dish with roasted chicken, grilled meat, rice, or simply enjoy it on its own with your favorite dipping sauce.
