Heat & Intensity Guide

  • Roasting Intensity: High Heat (400∘F / 204∘C). High heat caramelizes the natural sugars inside the root while softening the interior structure.
  • Brine Simmer Intensity: Medium-Low Heat. Gentle boiling extracts aromatic oils from whole spices without evaporating acetic acid from the vinegar.
  • Flavor Profile Intensity: Medium-Bold. Balanced ratio of sweet (granulated sugar), acidic (apple cider vinegar), and warm spice notes.

Ingredients

The Produce:

  • 3 lbs medium-sized fresh red beets (greens trimmed to 1 inch, taproots left intact)
  • 2 tbsp olive oil (for roasting)
  • 1 medium yellow onion, thinly sliced into half-moons (optional, for texture)

The Pickling Brine:

  • 1.5 cups apple cider vinegar (5% acidity)
  • 1 cup filtered water
  • 43 cup granulated white sugar
  • 1.5 tsp coarse sea salt or pickling salt

Whole Aromatic Spices:

  • 1 cinnamon stick (approx. 2 inches)
  • 4 whole cloves
  • 3 whole allspice berries
  • 1 star anise pod
  • 21 tsp mustard seeds
  • 21 tsp black peppercorns

Instructions

1. Roast the Beets (High Intensity: 400∘F / 204∘C)

  1. Pre-heat your oven to 400∘F (204∘C).
  2. Scrub the beets under cold running water to remove dirt. Do not cut off the roots or skin yet; leaving them whole prevents juice leakage during cooking.
  3. Place trimmed beets on a large sheet of heavy-duty aluminum foil. Drizzle with 2 tablespoons of olive oil, tossing lightly to coat.
  4. Wrap the foil tightly into a sealed packet to trap steam. Roast on a baking sheet for 45 to 55 minutes, or until a sharp knife slides into the thickest part with minimal resistance.
  5. Remove from oven, carefully open the foil packet to vent steam, and let sit until cool enough to handle (about 15 minutes).

2. Peel and Slice
